500 grams frozen or fresh-cut fries
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
Pinch of salt
1 tablespoon butter or plant-based butter
1 tablespoon all-purpose flour
3/4 cup milk
1 cup shredded cheddar cheese
1/4 teaspoon Cajun seasoning (for cheese sauce)
Pinch of salt and black pepper
4 tablespoons mayonnaise
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 teaspoon hot sauce
1 teaspoon garlic powder (for voodoo sauce)
1/2 teaspoon smoked paprika (for voodoo sauce)
1 teaspoon vinegar or lemon juice
1 teaspoon sugar or honey
Instructions
Cook the fries according to package instructions until golden and crispy.
Toss the hot fries with olive oil, Cajun seasoning, garlic powder, smoked paprika, black pepper, and a pinch of salt.
In a saucepan over medium heat, melt the butter and whisk in the flour, cooking for 1 minute.
Gradually whisk in the milk until thickened, then stir in the shredded cheddar cheese, Cajun seasoning, and salt and pepper.
In a mixing bowl, whisk together the mayonnaise, ketchup, Dijon mustard, hot sauce, garlic powder, smoked paprika, vinegar or lemon juice, and sugar or honey to prepare the voodoo sauce.
Layer the seasoned fries on a serving plate, drizzled with cheese sauce and a dollop of voodoo sauce.
