A comforting low-carb cabbage casserole that combines savory ground meat, zesty tomatoes, and melted cheese in just 30 minutes.

Ingredients

  • 1 pound ground beef or turkey, browned and drained
  • 1 small onion, diced
  • 1/2 head of cabbage, chopped into medium chunks (approximately 3 cups)
  • 1 (10 ounce) can tomatoes with green chilies (undrained)
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or colby jack recommended)

Instructions

  1. Brown the meat in a large skillet over medium heat. Drain off any grease.
  2. Add the diced onion and sauté for 3-5 minutes until tender and golden.
  3. Stir in the cabbage, tomatoes, tomato sauce, and spices until well combined.
  4. Cover and simmer for 15-18 minutes, stirring occasionally, until the cabbage is tender.
  5. Remove from heat, sprinkle cheese on top, cover, and let sit for about 2 minutes to melt.
