  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled sausage or bacon (optional)
  • 1 cup diced vegetables (bell peppers, onions, tomatoes, etc.)
  • Salt and pepper to taste

Instructions

  1. Whisk together the eggs and milk, seasoning with salt and pepper to taste.
  2. Cook your diced vegetables, adding meat if using, until softened.
  3. Pour the egg mixture into the skillet and scramble until fully cooked.
  4. Lay out the tortillas and sprinkle the shredded cheese in the center of each.
  5. Divide the egg mixture evenly among the tortillas, then fold and tuck tightly.
  6. Wrap each burrito in plastic wrap and place in the freezer.
