32 ounces frozen homestyle beef meatballs
2 large yellow onions, thinly sliced
3 cloves garlic, minced
10.5 ounces condensed French onion soup
1 cup low-sodium beef broth
1 tablespoon balsamic vinegar (optional)
1 teaspoon dried thyme
1/2 teaspoon black pepper
2 tablespoons cornstarch (optional, for thicker gravy)
1/4 cup water (if using cornstarch)
1 to 1 1/2 cups shredded Gruyère or mozzarella cheese
Fresh parsley or thyme (for garnish)
Instructions
Layer the frozen meatballs in a 4 to 6-quart slow cooker. Top with sliced onions and minced garlic.
Make the sauce by whisking together French onion soup, beef broth, balsamic vinegar (if using), dried thyme, and black pepper. Pour the sauce over meatballs.
Slow cook on LOW for 5 to 6 hours or HIGH for 2 to 3 hours, stirring halfway through.
Thicken the gravy by whisking cornstarch with water, then stirring it into the crockpot. Cook on HIGH for 10 to 15 minutes.
Add shredded cheese on top and let it melt for about 5 minutes.
Serve garnished with fresh parsley or thyme, over mashed potatoes or egg noodles.
