A delightful blend of marinated olives and feta cheese, perfect for appetizers or side dishes, bursting with Mediterranean flavors.

Ingredients

Scale
  • 2 cups mixed olives (green and black)
  • 200 grams feta cheese, cut into cubes
  • 3 cloves garlic, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Whisk the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, crushed red pepper flakes, and black pepper to form a smooth marinade.
  2. Prepare the Olives and Feta: Place the mixed olives and feta cheese cubes in a medium-sized airtight container.
  3. Combine Ingredients: Pour the marinade evenly over the olives and feta, ensuring everything is nicely coated.
  4. Add Fresh Herbs: Tuck in the rosemary and thyme sprigs to infuse the dish with their aromatic oils.
  5. Seal and Marinate: Seal the container tightly and refrigerate for at least 120 minutes, preferably overnight, to allow the flavors to mingle beautifully.
  6. Remove from the refrigerator 20 minutes before serving and stir gently to redistribute the marinade for maximum flavor.

Notes

For a twist, try adding roasted red peppers or sun-dried tomatoes. Serve with a crusty baguette or alongside grilled meats.
