  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 1 cup chicken broth
  • 1 cup spinach (fresh or frozen)
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese (for garnish)
  • Fresh basil (for garnish)

Instructions

  1. Heat a bit of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then cook until golden brown on both sides, about 6-7 minutes per side. Once seared, remove from the pan and set aside.
  2. Add the minced garlic to the same skillet and sauté for 1 minute until fragrant.
  3. Stir in the sun-dried tomatoes, heavy cream, chicken broth, Italian seasoning, and spinach. Let it simmer for about 5 minutes until flavors meld into a sauce.
  4. Return the chicken breasts to the skillet, cover, and cook for an additional 10-15 minutes, until the chicken is cooked through and the sauce thickens.
  5. Serve hot, garnished with Parmesan cheese and fresh basil leaves.
