A comforting dish of homemade meatballs smothered in rich gravy, served over creamy mashed potatoes.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 onion, chopped
  • 2 cups beef broth
  • 1/4 cup flour
  • 2 tbsp olive oil
  • 4 cups mashed potatoes

Instructions

  1. Mix the Meatball Ingredients: In a bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and pepper. Mix well until everything is evenly distributed, then form the mixture into bite-sized meatballs.
  2. Sear Those Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and cook them until they’re browned on all sides for about 6-8 minutes. Once they’re golden, remove them from the skillet and set aside.
  3. Sauté the Onion: In the same skillet, add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  4. Flour Power: Sprinkle flour over the sautéed onions and stir to combine, cooking for 1-2 minutes.
  5. Create the Gravy: Gradually pour in the beef broth while stirring constantly until the gravy starts to thicken and bubble.
  6. Return Meatballs to the Gravy: Carefully add back the browned meatballs to the skillet, cover, and let them simmer in the gravy for about 15 minutes.
  7. Serve It Up: Ladle the meatballs and gravy over creamy mashed potatoes and enjoy!

Notes

Pair with steamed vegetables and crusty bread for a complete meal. Leftovers can be stored in the refrigerator for up to 3 days.
