A simple yet vibrant Mediterranean dish featuring tender salmon, anise-like fennel, and zesty orange.

Ingredients

  • 2 salmon fillets
  • 1 bulb fennel, thinly sliced
  • 1 orange, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the thinly sliced fennel in a baking dish.
  3. Place the salmon fillets on top of the fennel.
  4. Drizzle olive oil and orange juice over the salmon and fennel.
  5. Sprinkle salt, pepper, and orange zest over the dish.
  6. Bake for about 20-25 minutes until the salmon flakes easily.
  7. Garnish with fresh dill and serve immediately.

Notes

To prevent dry salmon, check for doneness a couple of minutes early. Substitute fennel with onions or bell peppers if desired.
