A quick and satisfying Mediterranean-inspired beef stir fry with vibrant vegetables and a fragrant blend of spices.

  • 1 lb beef sirloin, thinly sliced
  • 2 cups mixed bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1/2 cup red onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or wok over medium-high heat.
  2. Add the sliced beef to the skillet and cook until browned, about 3-4 minutes.
  3. Once the beef is browned, add the minced garlic and sliced red onion, sautéing until fragrant.
  4. Add the mixed bell peppers and zucchini, stir-frying until the veggies are tender-crisp, about 3-5 minutes.
  5. Pour in the soy sauce, sprinkle with dried oregano, and season with salt and pepper; stir to combine.
  6. Let everything cook together for another minute until well mixed and heated through.
  7. Serve hot over a fluffy bed of rice or quinoa.
