  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Bell peppers, cut into squares
  • Red onion, cut into squares
  • Cherry tomatoes
  • Skewers (wooden or metal)

Instructions

  1. Create the Marinade: In a bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and pepper.
  2. Marinate the Chicken: Add the chicken cubes into the marinade and mix well to coat evenly. Allow the chicken to marinate for at least 30 minutes.
  3. Preheat the Grill: While the chicken is marinating, preheat your grill to medium-high heat.
  4. Assemble the Kabobs: Thread the marinated chicken, squares of bell peppers, red onion, and cherry tomatoes onto skewers.
  5. Grill the Kabobs: Place the kabobs on the grill and cook for about 10-15 minutes, turning occasionally.
  6. Serve and Enjoy: Remove the kabobs from the grill and serve hot, alongside fluffy rice or warm pita bread.

Notes

For a deeper flavor, marinate the chicken for 1-2 hours. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
