  • 4 chicken breasts, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil

Instructions

  1. Rinse and prepare the quinoa by rinsing it under cold water, then cook according to package instructions.
  2. Combine the cooked quinoa with the sliced grilled chicken, cherry tomatoes, diced cucumber, bell pepper, red onion, and olives in a large bowl.
  3. Drizzle the mixture with olive oil and lemon juice, then season with salt and pepper to taste.
