A flavorful Mediterranean-inspired dish featuring chicken, zucchini, tomatoes, olives, and topped with feta and mozzarella cheese.

  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 medium zucchini, sliced into half-moons
  • 1 pint cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 4 cloves garlic, minced
  • 1/3 cup Kalamata olives, pitted and roughly chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 4 ounces feta cheese, crumbled
  • 1 cup shredded mozzarella

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly oil a 9×13-inch baking dish.
  2. In a large mixing bowl, toss together the chopped chicken, zucchini, halved cherry tomatoes, sliced red onion, minced garlic, and Kalamata olives.
  3. Drizzle the olive oil and lemon juice over the mixture, then sprinkle with oregano, thyme, paprika, salt, and black pepper. Mix until evenly coated.
  4. Spread the seasoned chicken and vegetable mixture evenly in the prepared baking dish.
  5. Bake uncovered for 25 minutes.
  6. Sprinkle the crumbled feta cheese and shredded mozzarella over the dish and return to the oven for another 10 minutes.
  7. Let the dish sit for 5 minutes before serving.
  8. Garnish with freshly chopped basil or parsley just before serving.

Notes

Pairs well with a crisp side salad and pita. Can be stored in the refrigerator for up to 3 days.
