  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and prepare the quinoa: Rinse quinoa under cold water. In a pot, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until water is absorbed.
  2. Combine fresh vegetables: In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. Fluff and cool the quinoa: Fluff the cooked quinoa with a fork and let it cool slightly.
  4. Add quinoa to the vegetable mixture, stirring gently to combine everything.
  5. Whisk the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over the salad and toss to combine, ensuring all ingredients are beautifully coated.
