A simple yet elegant Mediterranean Sea Bass recipe that highlights vibrant flavors and fresh ingredients, perfect for weeknight dinners and special gatherings.

  • 2 whole Mediterranean sea bass, cleaned
  • 4 tablespoons olive oil
  • 2 lemons, sliced
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 cup cherry tomatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sea bass under cold water and pat them dry with paper towels.
  3. Mix together the olive oil, minced garlic, dried oregano, salt, and pepper in a bowl.
  4. Rub the olive oil mixture all over the fish, coating every surface.
  5. Stuff the cavity of each fish with lemon slices and chopped parsley.
  6. Place the fish on a baking sheet and surround them with halved cherry tomatoes.
  7. Drizzle any remaining olive oil mixture over the tomatoes.
  8. Bake for 25-30 minutes, or until the fish is cooked through.
  9. Serve hot with additional lemon slices if desired.

Notes

For a spicy kick, add red pepper flakes to the olive oil mixture. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
