  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat the olive oil in a sturdy skillet over medium heat until it shimmers.
  2. Add the minced garlic and cook for about 1 minute.
  3. Carefully introduce the shrimp, seasoning with oregano, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes.
  4. Stir in the fresh spinach and cook until it wilts down.
  5. Remove from heat, then add crumbled feta and lemon juice. Toss to combine.
