  • 1 cup quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced

  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook quinoa or rice according to package instructions, about 15 minutes.
  2. Combine halved cherry tomatoes, diced cucumber, bell pepper, and red onion in a large mixing bowl.
  3. Whisk together olive oil, lemon juice, garlic powder, salt, and pepper in a separate small bowl.
  4. Add the dressing to your veggie mixture and toss to combine.
