  • 1 cup roasted chickpeas (optional for paleo or keto)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • â…“ cup feta cheese, crumbled (optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber, grated (squeezed dry)
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey (omit for Whole30)

Instructions

  1. Marinate the steak: Mix the marinade ingredients in a bowl. Coat the sirloin steak in the marinade and let it rest for 30 minutes to 4 hours in the refrigerator.

  3. Whisk the lemon vinaigrette: In a separate bowl, whisk together the vinaigrette ingredients until blended.
  4. Sear the steak: Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side. Remove and let it rest before slicing.
  5. Assemble the bowl: Start with a base of grains, add sliced steak, and top with cherry tomatoes, cucumber, red onion, olives, feta, and fresh herbs. Drizzle with tzatziki and lemon vinaigrette.

Notes
