A quick and indulgent Mediterranean shrimp dish featuring fresh spinach, feta cheese, and succulent shrimp that come together for a vibrant meal.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Stir in fresh spinach and cook until wilted, about 2 minutes.
  5. Remove from heat, then mix in crumbled feta, lemon juice, salt, and pepper.
  6. Serve garnished with chopped parsley.

Notes
