  • 1 cup black beans, cooked (drained and rinsed if canned)
  • 1 cup corn kernels
  • 1 cup cottage cheese
  • 1 tablespoon chili powder
  • 1 tablespoon olive oil

  • Optional: chopped cilantro and lime wedges for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced chicken to the skillet and season it with salt, pepper, and chili powder. Cook for 5 to 7 minutes until browned.
  3. Stir in the black beans and corn, warming them for about 3 to 4 minutes.
