  • 1 cup cottage cheese (blended smooth)
  • 1 cup shredded Gruyere or Swiss Cheese

  • 1/2 cup Beef Broth

Instructions

  1. Caramelize the onions: In a skillet over medium-low heat, melt the butter. Add the sliced onions and allow them to cook gently for 20-25 minutes, stirring occasionally. As they soften, they will turn deep golden brown.
  2. Prepare the sauce: While the onions are caramelizing, combine the blended cottage cheese, beef broth, and dried thyme in a blender. Blend until creamy.
  3. Assemble the casserole: Preheat your oven to 375°F (190°C). In a large bowl, combine the shredded chicken and caramelized onions. Pour in the cottage cheese sauce and mix well.
  4. Bake the casserole: Transfer the mixture to a baking dish and top with shredded Gruyere or Swiss cheese. Bake for about 20 minutes, until the cheese is bubbly and golden.

Notes

For a lighter option, substitute butter with olive oil. You can prep the casserole ahead of time before baking.
