Ingredients

  • 2 cups cooked sushi rice
  • 12 oz broccoli, chopped (about 45 cups florets)
  • 1 tbsp olive oil
  • 1 lb ground poultry (lean ground chicken or turkey)
  • 3 garlic cloves, minced
  • 1 tbsp cornstarch
  • 1 tbsp brown sugar
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp hoisin sauce
  • 1/4 cup chicken stock
  • 1/3 cup light mayonnaise
  • 2 tsp sriracha
  • Sesame seeds (for garnish)

Instructions

  1. Prepare the Sauce by whisking together cornstarch, brown sugar, soy sauce, hoisin sauce, and chicken stock in a medium bowl. Set aside.
  2. Sauté the broccoli in olive oil over medium heat, adding a splash of water and seasoning with salt for about 5 minutes.
  3. Cook the ground chicken in the same skillet, breaking into crumbles and cooking until no longer pink.
  4. Combine the sautéed broccoli with the chicken. Add minced garlic and stir, then pour the prepared sauce over and let it simmer.
  5. Serve the mixture over sushi rice, drizzle with sriracha mayo, and garnish with sesame seeds.

Notes

Makes a great meal on its own or can be paired with a light cucumber salad.
