30-Minute Mexican Ground Beef Rice

A quick and easy dish that combines tender ground beef, fluffy rice, and a blend of vibrant Mexican flavors, perfect for family meals.

  • 1 lb lean ground beef
  • 1 cup yellow onion, diced
  • 3 cups chicken broth
  • 2 cups instant rice
  • 1 cup medium salsa
  • 1/2 cup Heinz chili sauce
  • 8.75 oz canned corn, not drained
  • 4 oz canned chopped green chilies, not drained
  • 1 oz taco seasoning
  • 3 cups shredded mozzarella and cheddar cheese
  • 1 tsp dried chives

Instructions

  1. Heat the pan by placing a large saute pan on the stove over medium-high heat and adding a dab of butter or margarine.
  2. Brown the beef by cooking the ground beef in the saute pan until it begins to brown.
  3. Sauté the onions by adding diced onions to the pan with the ground beef, mixing them in.
  4. Crumble the meat well while continuing to cook the beef and onions.
  5. Drain the fat from the cooked ground beef.
  6. Add the chicken broth to the pan with the ground beef and onions.
  7. Stir in the instant rice until submerged in the liquid.
  8. Simmer the rice until all liquid is absorbed.
  9. Mix in the salsa, chili sauce, canned corn, chopped green chilies, and taco seasoning.
  10. Simmer the mixture for a few minutes.
  11. Cheese the dish by adding two cups of shredded cheese to the pan.
  12. Top with the remaining cup of shredded cheese without stirring.
  13. Garnish with dried chives and let it sit to melt the cheese.
  14. Serve this dish to your loved ones and enjoy!

Notes

If you want to make this dish even faster, use pre-cooked chicken instead of ground beef. Feel free to switch out the cheese with your family’s favorites.
