30-Minute Mexican Ground Beef Rice

A quick and flavorful dish featuring lean ground beef, zesty salsa, and creamy cheese, perfect for busy weeknights.

  • 1 lb lean ground beef
  • 1 cup yellow onion, diced
  • 3 cups chicken broth
  • 2 cups instant rice
  • 1 cup medium salsa
  • 1/2 cup Heinz chili sauce
  • 8.75 oz canned corn, not drained
  • 4 oz canned chopped green chilies, not drained
  • 1 oz taco seasoning
  • 3 cups shredded mozzarella and cheddar cheese
  • 1 tsp dried chives

Instructions

  1. Heat the pan: Place a large sauté pan on the stove over medium-high heat and add a dab of butter or margarine to the pan.
  2. Sauté the beef: Cook the ground beef in the sauté pan until it’s browned and crumbled nicely.
  3. Add onions: Add diced onions to the pan while the ground beef is cooking, mixing them in to build flavor.
  4. Combine ingredients: Continue cooking the ground beef and onions, being sure to crumble the ground beef well as it cooks.
  5. Drain the grease: Once the ground beef is fully cooked, drain the grease from the pan to keep it nice and healthy.
  6. Add chicken broth: With the pan still over medium-high heat, add the chicken broth to the mixture and bring it to a simmer.
  7. Stir in the rice: Add the instant rice to the pan, gently stirring until all of the rice is submerged in the liquid.
  8. Simmer the rice: Leave the dish to simmer, stirring occasionally, until all of the liquid is absorbed by the rice.
  9. Mix in the good stuff: Add the salsa, chili sauce, canned corn (don’t drain!), chopped green chilies, and taco seasoning to the pan. Stir well to combine.
  10. Simmer all together: Let the dish to simmer for a few minutes and then remove the pan from the heat.
  11. Add cheese: Add two cups of the shredded cheese to the pan, stirring until it’s fully melted and combined with the ground beef and rice mixture.
  12. Final touch: Sprinkle the remaining cup of shredded cheese on top, but this time don’t stir it in. Let it rest for a few moments to melt perfectly.
  13. Garnish: Sprinkle the dried chives on top of the cheese for a pop of color and flavor.
  14. Serve and enjoy! Leave the dish to sit for a few minutes to allow the cheese on top to melt fully, then serve up generous portions and enjoy the magic!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop until warmed through. You can freeze portions for later use; just be sure to thaw in the fridge before reheating.
