  • 1/2 cup cottage cheese (blended smooth)
  • 1 large egg
  • 1/4 cup honey
  • 1 1/2 cups rolled oats (keep them whole, do not blend)
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 3/4 cup fresh strawberries, finely diced (divided)

Instructions

  1. Whisk the Wet Ingredients: In a medium bowl, whisk together the blended cottage cheese, egg, honey, and vanilla until smooth.
  2. Combine Oats and Baking Powder: Stir in the whole rolled oats and baking powder. Let the mixture sit for 5 minutes to allow the oats to hydrate.
  3. Fold in Strawberries: Gently fold in half of the finely diced strawberries to the oat mixture.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop the Batter: Scoop 1-inch balls of the thick batter onto the prepared baking sheet, flattening them slightly into thick discs.
  6. Top with Strawberries: Press the remaining diced strawberries onto the tops of the bites to add a fresh burst of flavor.
  7. Bake to Perfection: Bake for 12–15 minutes, or until lightly golden. Let them cool completely on the baking sheet to firm up before enjoying.
