  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Steamed vegetables (e.g., broccoli, carrots)
  • Rice for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the miso paste, soy sauce, honey, minced garlic, grated ginger, salt, and pepper.
  3. Take the chicken thighs and thoroughly coat them with the miso marinade.
  4. Place the marinated chicken thighs in a baking dish and bake for 25-30 minutes until cooked through.
  5. Once the chicken is done, serve with steamed veggies and rice.

Notes

For richer flavor, marinate chicken for at least an hour or overnight. You can also experiment with different vegetables.
