A decadent British dessert with a rich, moist texture and a luscious toffee sauce that brings comfort and joy.

Ingredients

  • 200g pitted dates, chopped
  • 300ml boiling water
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. Pour boiling water over the chopped dates and let them soak for about 10 minutes.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Mix the flour, baking soda, and salt in another bowl, then gradually add this to the wet mixture, alternating with the soaked dates and their water.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Simmer together the toffee sauce ingredients until smooth: 100g brown sugar, 100ml heavy cream, and 50g butter.
  8. Drizzle the warm toffee sauce over the pudding and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave with extra toffee sauce.
