A comforting and delectable Mushroom Chicken recipe with succulent chicken breasts in a creamy mushroom sauce.

  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 8 ounces Mushrooms, sliced
  • 1 cup Heavy cream
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Parsley, chopped

Instructions

  1. Begin by generously seasoning your chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear them until golden brown on both sides.
  3. Once the chicken is perfectly seared, remove it from the skillet and set it aside.
  4. In the same skillet, toss in your sliced mushrooms along with garlic and sauté until tender.
  5. Next, pour in the chicken broth and bring it to a gentle simmer, scraping up any brown bits stuck to the skillet.
  6. Now, stir in the heavy cream and return the seared chicken to the skillet, letting it simmer until cooked through (approximately 5-7 minutes).
  7. Finally, garnish the Mushroom Chicken with fresh parsley and serve it warm over mashed potatoes or rice.

Notes

For a lighter version, substitute heavy cream with coconut milk or Greek yogurt. Leftovers can be stored in an airtight container for up to 3 days.
