  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • Salt and pepper to taste

Instructions

  1. Cook the Rice: Start by cooking the rice according to package instructions; once it’s ready, set it aside to let it cool. This forms the perfect base for your stir-fry.
  2. Sauté the Chicken: In a large skillet or wok, heat the olive oil over medium-high heat. Season the diced chicken with salt and pepper, then add it to the pan. Cook for about 5-7 minutes, stirring frequently, until the chicken is golden and cooked through. Remove it from the pan and set aside.
  3. Fragrant Onions and Garlic: Using the same pan, add the sesame oil. Once hot, toss in the chopped onions and minced garlic. Sauté them until they become aromatic and translucent, which should take about 2 minutes.
  4. Add the Veggies: Next, add the broccoli florets and sliced mushrooms to the pan. Cook until they become tender-crisp, about 3-4 minutes. The colors will be vibrant, and your kitchen will be filled with a heavenly aroma.
  5. Bring the Chicken Back: Time to reunite the chicken with the veggies! Return the sautéed chicken to the pan and pour in the soy sauce, mixing everything well until everything is evenly coated.
  6. Thicken the Sauce: Combine the cornstarch and water in a small bowl to create a slurry. Pour this into the pan, stirring well until the sauce thickens slightly. This will coat everything beautifully and add that glossy finish.
