Ingredients

  • 1/2 cup unsalted butter
  • 1/4 cup powdered sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Mix together flour, unsalted butter, and powdered sugar until it resembles coarse crumbs. Press into the bottom of the prepared baking dish.
  3. Bake for 15 minutes, or until lightly golden.
  4. Whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
  5. Pour the lemon mixture over the baked crust, spreading it evenly.
  6. Bake for an additional 20-25 minutes, until the filling is set.
  7. Cool completely, then dust with powdered sugar before slicing into bars.

Notes

Use fresh lemon juice for the best flavor. Can be made a day in advance and stored in the fridge.
