A rich, velvety potato soup that encapsulates the essence of home cooking. Perfect for cozy dinners and garnished with fresh parsley.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or a few sprigs of fresh thyme
  • Chopped parsley for garnish

Instructions

  1. Sauté the onions: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until it turns translucent and fragrant.
  2. Add the potatoes and broth: Add the diced potatoes followed by the broth. Bring this mixture to a boil.
  3. Simmer for tenderness: Reduce the heat and let the pot simmer for about 15-20 minutes, or until the potatoes are tender.
  4. Mash for texture: Mash some of the potatoes in the pot for a thicker consistency.
  5. Stir in cream and thyme: Pour in the heavy cream and add thyme. Season with salt and pepper to taste.
  6. Final touches: Give the soup one last stir and remove from heat.
  7. Serve with love: Ladle into bowls and garnish with parsley.

Notes

For a smoother texture, blend with an immersion blender. Store leftovers in an airtight container for up to three days.
