  • 1 cup granulated sugar
  • 1 cup plain yogurt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup shelled pistachios (chop coarsely for texture contrast)
  • 1/4 cup powdered sugar (optional, for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan or line it with parchment paper.
  3. In a large mixing bowl, sift together the flour and baking powder.
  4. Add the granulated sugar, yogurt, eggs, vegetable oil, and vanilla extract to the bowl. Stir until smooth.
  5. Gently stir in the chopped pistachios.
  6. Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes.
  7. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
