A comforting one-pot dish filled with creamy, cheesy broccoli and fluffy rice, perfect for cozy nights in.

Ingredients

  • 1 cup Long-grain white rice
  • 2 cups Fresh broccoli florets
  • 2 cups Chicken or vegetable broth
  • 1 cup Sharp cheddar cheese
  • 1/2 cup Heavy cream
  • 2 tablespoons Butter
  • 2 cloves Minced garlic
  • 1 medium Chopped onion
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Sauté the onion and garlic in melted butter until translucent.
  2. Toast the rice for 1-2 minutes in the buttery mixture.
  3. Add the chicken or vegetable broth and bring to a boil, then simmer covered for 15 minutes.
  4. Fold in the fresh broccoli and steam for an additional 5 minutes.
  5. Remove from heat and stir in heavy cream and cheddar cheese until melted.
  6. Serve hot and enjoy!

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat with a splash of broth for best results.
