  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 sprig fresh thyme
  • 8 oz cremini mushrooms, sliced
  • 2.5 cups vegetable broth
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • To taste salt
  • To taste black pepper
  • To taste fresh parsley, for garnish
  • To taste red pepper flakes

Instructions

  1. Sauté the aromatics: In a large pot, heat the butter and olive oil over medium heat. Add minced garlic and stir until fragrant, about 1 minute.
  2. Cook the mushrooms: Add the sliced cremini mushrooms to the pot. Sauté until browned and they release moisture, roughly 5–7 minutes.
  3. Add the orzo: Stir in the dry orzo and let it toast slightly for about 2 minutes.
  4. Pour in the broth: Add vegetable broth and thyme sprig. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes.
  5. Stir in cream and cheese: Once orzo is tender, add heavy cream and grated Parmesan. Mix until creamy.
  6. Season to perfection: Taste and season with salt, black pepper, and a pinch of red pepper flakes.
  7. Garnish and serve: Serve hot and garnish each bowl with freshly chopped parsley.

Notes
