  • 0.5 cups Parmesan cheese, freshly grated
  • 2 tbsp unsalted butter
  • Salt, to taste

Instructions

  1. Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and cook for an additional minute.
  2. Add the mushrooms: Toss in the sliced mushrooms and stir frequently for about 5 minutes until they begin to brown and soften.
  3. Stir in the rice: Add the long-grain rice, stirring it with the mushroom mixture until the grains are slightly translucent.
  4. Pour in the broth: Carefully add the vegetable broth and season with salt and black pepper. Bring everything to a gentle simmer.
  5. Incorporate cream and thyme: Once the rice is tender and has absorbed most of the broth (about 18-20 minutes), reduce the heat. Stir in the heavy cream, grated Parmesan cheese, and fresh thyme.
  6. Final touches: Allow the rice to rest for a few minutes off the heat, discard the thyme sprigs, and stir to combine all flavors.
