  • 1 cup Sun-dried tomatoes (drained)
  • 2 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese (freshly grated)
  • 1/4 cup Fresh basil (chopped)
  • 1 teaspoon Red pepper flakes
  • 1 cup Spinach or kale

Instructions

  1. Sauté the Aromatics: In a large pot over medium heat, melt the butter. Add in the minced garlic and sauté until fragrant, about 1 minute.
  2. Incorporate the Sun-Dried Tomatoes: Introduce the sun-dried tomatoes to the pot, stirring them with the buttery garlic for about 2 minutes.
  3. Add the Orzo: Pour in the dry orzo, making sure it gets a nice coating of butter, garlic, and tomato flavor. Stir for about a minute.
  4. Pour in the Broth: Add the chicken or vegetable broth to the pot. Bring this mixture to a gentle boil, then reduce to a simmer and cook for about 10 minutes.
  5. Create Creamy Bliss: Stir in the heavy cream, Parmesan cheese, and red pepper flakes until the cheese is melted.

Notes

For a thicker sauce, reduce the amount of broth slightly. Cooking the orzo directly in the broth intensifies the flavor.
