  • 2 tablespoons Butter (Unsalted)
  • 4 cups Chicken or vegetable broth
  • 2 cloves Garlic (Minced)
  • 1/4 cup Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 1/2 cup Parmesan cheese (Grated)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper (Freshly cracked)
  • 1/4 cup Fresh parsley (Chopped for garnish)

Instructions

  1. Sautéing the Garlic: In a medium saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
  2. Adding the Broth: Pour in the chicken or vegetable broth and raise the heat to bring it to a gentle boil.
  3. Cooking the Orzo: Once the broth is boiling, stir in the orzo pasta, salt, and black pepper. Reduce the heat to a simmer and cook for about 10 minutes, stirring occasionally until the orzo is al dente and has absorbed most of the liquid.
  4. Mixing in Lemon and Parmesan: Remove the pot from the heat, and quickly stir in the fresh lemon juice, lemon zest, and grated Parmesan cheese, creating a creamy consistency.
  5. Garnishing and Serving: Sprinkle the chopped parsley over the top for a fresh finish, then serve immediately while it’s hot and comforting!
