A quick and delicious one-pot meal featuring tender chicken thighs and flavorful orzo in a lemon garlic broth.

Ingredients

  • 1 pound Boneless chicken thighs
  • 1 cup Orzo pasta
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth (low-sodium)
  • 1 tablespoon Lemon juice (fresh)
  • 1 tablespoon Lemon zest (fresh)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1/4 cup Fresh parsley, chopped
  • 1/2 cup Grated Parmesan cheese (optional)

Instructions

  1. Sauté the chicken in olive oil until browned on both sides, about 5-7 minutes. Remove and set aside.
  2. Add the minced garlic to the pot and sauté for 1 minute until fragrant.
  3. Pour in the chicken broth, lemon juice, and lemon zest. Stir in the orzo pasta.
  4. Return the browned chicken to the pot, bring to a boil, then reduce heat and simmer covered for 10-12 minutes.
  5. Sprinkle with freshly chopped parsley and stir in optional Parmesan cheese.
  6. Serve hot with a side salad or crusty bread.

Notes

For extra zest, consider adding capers or olives. Chicken breasts can also be used but thighs are recommended for juiciness.
