  • 2 lbs Chicken thighs or breasts
  • 2 tbsp Fresh ginger (grated finely)
  • 1/2 cup Fresh orange juice (freshly squeezed)
  • 1/4 cup Soy sauce
  • 1 tbsp Honey or brown sugar
  • 2 medium Yellow onions (sliced thinly)
  • 2 tbsp Butter or olive oil
  • 1 pinch Salt
  • 1/4 cup Fresh cilantro or green onions (chopped)
  • 2 tbsp Sesame seeds (toasted lightly)
  • 4 cups Steamed rice or noodles

Instructions

  1. Mix and Marinate: In a large bowl, combine the chicken, grated ginger, freshly squeezed orange juice, soy sauce, and honey (or brown sugar). Mix well to ensure all the ingredients coat the chicken evenly. Make sure to let this marinate for at least 15 minutes.
  2. Caramelize Onions: In a skillet over medium heat, melt the butter (or heat the olive oil). Add the sliced onions, stirring occasionally. Let them cook for about 10-15 minutes until they are soft and golden brown.
  3. Cook the Chicken: Once the onions are caramelized, push them to one side of the skillet. In the same skillet, add the marinated chicken along with the marinade juice. Cook for about 6-7 minutes per side or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  4. Final Assembly: When the chicken is ready, plate it on a bed of steamed rice or noodles, spoon over the caramelized onions, and garnish with fresh cilantro or green onions and toasted sesame seeds.

Notes

For richer flavor, let the chicken marinate for at least an hour or overnight. If short on time, use pre-cooked onions.
