A delightful twist on classic fried chicken, marinated in dill pickle juice and coated with a crispy Parmesan crust.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Marinate the chicken by placing it in a bowl and pouring the dill pickle juice over it. Cover and let it marinate for at least 1 hour.
  2. Preheat your oven to 400°F (200°C).
  3. Prepare the crust mixture by combining breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper in a separate bowl.
  4. Coat the marinated chicken thoroughly in the breadcrumb mixture, pressing gently.
  5. Sear the chicken in hot oil for 2-3 minutes on each side until golden-brown.
  6. Bake the chicken in a baking dish for 20-25 minutes, or until fully cooked at an internal temperature of 165°F (75°C).
  7. Serve hot and enjoy.

Notes

For extra crunch, consider adding crushed cornflakes to the breadcrumb mixture. Leftovers can be stored in an airtight container for up to 3 days.
