Crispy, cheesy Parmesan Crusted Potatoes that are tender on the inside and perfect for sharing.

Ingredients

  • 1 pound baby potatoes
  • 2 cups freshly grated Parmesan cheese
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Wash the baby potatoes thoroughly and cut them in half.
  3. In a small bowl, melt the unsalted butter and mix it with minced garlic, olive oil, chopped parsley, salt, and pepper.
  4. On the prepared baking sheet, sprinkle a generous layer of Parmesan cheese in small mounds.
  5. Dip the cut side of each potato half into the garlic butter mixture, then press it down onto the Parmesan mounds.
  6. Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the potatoes are tender and the Parmesan crust is golden and crispy.
  7. Let the Parmesan Crusted Potatoes cool for a few minutes before serving warm, garnished with extra fresh parsley if desired.
