  • 3 pieces ripe bananas (mashed)
  • â…“ cup melted coconut oil
  • 1 large beaten egg
  • 1 teaspoon vanilla extract
  • ¾ cup brown sugar (lightly packed)
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 ½ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by greasing it lightly or lining it with parchment paper.
  2. Mash the ripe bananas until they reach a smooth consistency.
  3. Add melted coconut oil, beaten egg, and vanilla extract to the banana mash. Stir until well combined.
  4. Add brown sugar and mix well to integrate.
  5. Incorporate baking soda and a pinch of salt, then sift in the all-purpose flour gently.
  6. Fold the flour into the wet ingredients just until combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for about 55-60 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack. Allow to cool completely before slicing.
