  • 2 cups basmati rice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup slivered almonds
  • 1/4 cup pistachios, chopped
  • 1/4 cup golden raisins
  • 1 medium onion, finely chopped
  • 1 teaspoon saffron threads
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • Salt to taste
  • 4 cups water or broth
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
  2. Sauté the onion in a large pot with olive oil over medium heat until translucent.
  3. Combine the drained rice, water or broth, saffron, cinnamon, cardamom, and salt in the pot.
  4. Cook the rice by bringing it to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until tender.
  5. Toast the almonds and pistachios in a small pan over low heat until golden.
  6. Fluff the cooked rice with a fork and gently mix in the dried fruits and toasted nuts.
  7. Serve warm, garnished with fresh parsley if desired.
