A delightful Pesto Salmon Pasta dish that combines flaky salmon with creamy pesto and pasta, ready in under 30 minutes.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 2 salmon fillets
  • 1/2 cup pesto sauce
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat the olive oil in a skillet over medium heat.
  3. Season the salmon fillets with salt and pepper, then place skin side down in the skillet. Cook for 4-5 minutes, then flip and cook for another 4-5 minutes until cooked through.
  4. Transfer the cooked salmon to a plate and let cool slightly before flaking into bite-sized pieces.
  5. Combine the flaked salmon with the cooked pasta in a large bowl and add pesto sauce.
  6. Mix everything together until well coated with pesto.
  7. Serve hot, garnished with grated Parmesan cheese and fresh basil.

Notes

For a little extra zing, consider adding a squeeze of lemon juice before serving. Store leftovers in an airtight container in the fridge for up to 3 days.
