Delicious bites of creamy Brie cheese wrapped in buttery puff pastry and coated with crunchy pistachios.

  • 1 sheet of puff pastry, thawed
  • 8 ounces of Brie cheese, sliced into 1-inch squares
  • 1 cup of pistachios, shelled and finely chopped
  • 1/4 cup of honey
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon of fresh thyme leaves (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet to smooth it out and thin it slightly.
  3. Cut the puff pastry into 2-inch squares, ensuring you have enough squares to wrap around each Brie bite.
  4. Place a square of Brie cheese in the center of each puff pastry square.
  5. Top each piece of Brie with a drizzle of honey, a sprinkle of salt and pepper, and a pinch of fresh thyme if using.
  6. Fold the corners of the puff pastry square over the Brie to create a little package, pinching the seams to seal them smoothly.
  7. Roll the sealed Brie bites in the chopped pistachios until they are completely coated.
  8. Transfer the coated Brie bites to the prepared baking sheet, spacing them about an inch apart.
  9. Brush the tops of each pastry with the beaten egg to give them a shiny, golden appearance when baked.
  10. Bake in the preheated oven for 15-20 minutes, or until the pastry has puffed up and is golden brown.
  11. Remove from the oven and let cool for a few minutes before serving.

Notes

Puff pastry should be thawed in the fridge overnight for optimal flakiness. Store leftovers in an airtight container for up to 3 days.
