  • 4 chicken thighs
  • 1/4 cup pomegranate molasses
  • 2 cups spinach or kale
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C) to get it nice and hot while you prepare the chicken.
  2. Mix together the pomegranate molasses, cumin, paprika, salt, and pepper in a bowl.
  3. Coat the chicken thighs thoroughly in the marinade and let them sit for at least 30 minutes.
  4. Heat olive oil in an oven-safe skillet over medium heat, then sear the marinated chicken thighs for 5-7 minutes on each side.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked.
  6. Add the spinach or kale to the skillet during the last 5 minutes of baking to wilt perfectly.
  7. Serve the chicken with a generous portion of greens on the side, drizzled with extra pomegranate molasses if desired.

Notes

Opt for bone-in, skin-on chicken thighs for the juiciest result and make the marinade ahead of time for quicker preparation.
