  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/4 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. Combine the cottage cheese, rolled oats, chocolate chips, honey, eggs, and vanilla extract in a large bowl and mix until well combined.
  3. Whisk together the baking powder, baking soda, and salt in a separate bowl.
  4. Add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes
