A delightful and nutritious blend of roasted sweet potatoes filled with protein-packed turkey and black beans, topped with cheese and fresh toppings.

  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under running water.
  3. Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add ground turkey, cumin, chili powder, salt, and pepper.
  6. Stir in the black beans with the turkey mixture.
  7. Let the sweet potatoes cool slightly.
  8. Spoon the savory turkey and black bean mixture into each sweet potato boat.
  9. Sprinkle shredded cheese over the top and return them to the oven.
