A quick and easy cherry jam that captures the essence of summer in just 30 minutes.

Ingredients

  • 2½ cups (400 g) halved and pitted sweet cherries (fresh or frozen)
  • 1 cup (200 g) granulated sugar
  • 2 Tablespoons (30 ml) lemon juice (from about one lemon)

Instructions

  1. Prepare the cherries by adding them to a medium pot with sugar and lemon juice.
  2. Heat over medium, stirring occasionally, until the sugar dissolves and the syrup turns dark red, about 5 minutes for fresh cherries and 10 minutes for frozen.
  3. Bring the jam to a rolling boil that cannot be stirred down. Cook for 8-10 minutes until thickened and reaching 220°F (105°C), then remove from heat.
  4. Test the consistency by placing a few drops of jam on a cool plate; if it runs, cook longer.
  5. Blend the jam using an immersion blender until no large pieces of cherry remain.
  6. Pour into jars, seal, and refrigerate. Allow the jam to set overnight for best results.

Notes

This cherry jam can be used not only on toast but also in desserts and cheese platters. Store in the refrigerator for 2-3 weeks.
