A quick and creamy vanilla raspberry chia pudding that’s nutritious and indulgent, perfect for breakfast or as a snack.

  • 1/4 cup white or black chia seeds
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh or frozen raspberries (mashed slightly)

Instructions

  1. Whisk the almond milk, maple syrup, and vanilla extract together until well combined.
  2. Pour in the chia seeds and stir vigorously for about 2 minutes until the mixture thickens slightly.
  3. Let it sit on the counter for 10 minutes, stirring again to prevent clumping.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Mash the raspberries in a small bowl before serving.
