  • 1 pound fish fillets (tilapia or cod, cut into bite-sized pieces)
  • 1 cup scallops (fresh or frozen)
  • 4 cups fish or vegetable stock
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 medium potatoes (peeled and diced)
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, cooking until fragrant, around 1 minute more.
  2. Add the Potatoes: Toss the diced potatoes into the pot. Stir well, coating them with the onion and garlic mixture. Season lightly with salt and pepper, and cook for another 3-4 minutes.
  3. Create the Broth: Pour in the fish or vegetable stock, bringing the mixture to a gentle simmer. Let it cook for 10-12 minutes, encouraging the potatoes to become tender.
  4. Introduce the Seafood: Once the potatoes are creamy soft, add the shrimp, fish fillets, and scallops to the pot. Gently stir to combine and simmer for an additional 5 minutes.
  5. Pour in the Cream: Lower the heat and carefully mix in the heavy cream and paprika. Stir gently until well combined, and let cook for 2-3 minutes.
  6. Final Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed.
  7. Garnish and Serve: Ladle the soup into bowls. Finish with fresh parsley and serve with lemon wedges.

Pair the soup with crusty bread or a simple green salad. For optimal texture, avoid freezing the soup due to the cream.
